WHAT IS A LIQUID NITROGEN FREEZER? |
Simply put, a nitrogen freezer is just a freezer which can freeze products rapidly with very low temperature (0℃ to -196℃). Liquid nitrogen freezer is a kind of blast or shock freezers that uses liquid nitrogen (LN2) as the cryogen to freeze large quantities of goods very quickly. When liquid nitrogen (LN2) vaporizes or gasifies, it absorbs the heat of the processed goods efficiently and instantly. The vaporizing-spraying system pushes the vaporized nitrogen all around the goods directly with a high velocity, to reduce the temperature of products as quickly as possible. |
WHY USE A LIQUID NITROGEN FREEZER? |
Nitrogen is a kind of toxic-free cryogen, poisonless and harmless. The vaporizing process of liquid nitrogen itself absorbs heat rapidly, no need condenser or compressor as those conventional freezers do. It is totally safe and environment-friendly. Utilizes a minimum amount of floor space and electricity. When you freeze foodstuffs, the water inside crystallizes into ice. The longer the freezing process takes, the larger the ice crystals. Larger ice crystals damage materials by causing phenomena like cell bursting (as shown in the picture below), which affects quality and flavor of foods. The freezing speed of liquid nitrogen freezer is three times faster than conventional quick-frozen equipment. Rapid freezing causes the crystals formed to be very small, which does less damage and preserves food at a higher quality. Even more usefully, once the food is "quick frozen" it can be moved into a normal freezer for longer term storage. |
